What is it?
EU law obliging every food business to declare 14 allergens (gluten, nuts, milk, eggs…) — including unpackaged food in restaurants. Staff must know what is in every dish.
What evidence should a candidate have?
Allergen training, menus or HACCP roles where the candidate managed allergen matrices; language skill to communicate them to guests.
Why it matters for staffing
One allergen mistake can close a client's restaurant; staff who demonstrably master allergens reduce that liability.
